The intoxicatingly delicious concoction of garbanzo beans, tahini, lemon juice, and garlic otherwise known like hummus is a staple in many households everywhere the world, whether you are fully vegan or love a healthy snack, and we can’t help but eat hummus for breakfast, lunch, or dinner this Friday as we celebrate International Hummus Day (yes, it’s a real thing). “hummus” is derived from the Arabic word for “chickpea.”

This nature’s perfect food remains a versatile and healthy staple in many diets.

1. Baharatli Hummus

Ingredients:

  • Red bell pepper 100gm
  • Dry red chili 50gm
  • Coriander seed 05gm
  • Thyme 01gm
  • Cumin whole 05gm
  • Olive oil 50gm
  • Red wine vinegar 10gm
  • Salt 02gm
  • Black pepper 01gm
  • Celery 10gm
  • Garlic peeled 10gm
  • Boiled chickpeas 150gm
  • Salad oil 60gm
  • Ice 19gm
  • Tahini paste 60gm
  • Garlic 2gm
  • Salt 4gm

Method:

Overnight soak of deseeded Kashmiri dry chilies. Pomace olive oil in a pan. Cook until slightly golden brown; add whole garlic, coriander seeds, caraway seed, cumin seed, chopped celery, sliced onion, and roasted red bell pepper.

Then add the soaked red chili and cook it. Cool the mixture before blending it into a fine paste in the mixer. Bring chickpeas, salt, and baking soda to a boil. Cool the chickpeas before putting them in the blender. Blend in the blender with the harissa sauce, ice cubes, and salad oil.
