  • ¼ tsp sugar
  • ¼ tsp garam masala
  • 1 tsp cornstarch slurry (optional)

Method

Heat coconut oil in a pan and let the fennel seeds crackle. Add curry leaves, shallots, ginger‑garlic paste, green chillies, and chilli flakes, sautéing until aromatic. Stir in turmeric, black pepper, and red chilli powder, then add prawns with salt. Cook on high heat until they turn pink and release their juices. Fold in the cheese slices, letting them melt into a glossy sauce that clings to the prawns- season with sugar and garam masala, adjusting salt as needed. For a thicker consistency, add cornstarch slurry and cook briefly. Garnish with fresh coriander and serve hot with rice or appams.
