In episode 20 of his Instagram series Kahaani Khazana, Chef Kapoor revealed the challenges he faced when last-minute changes disrupted his carefully planned menu.

The Fasting Surprise

Chef Kapoor and his team arrived in Abu Dhabi prepared to create an unforgettable culinary experience for PM Modi and other dignitaries. However, just hours before service, they learned that the Prime Minister would be fasting and unable to eat the prepared dinner. Rather than panic, the team quickly pivoted, preparing fasting-appropriate meals within tight timeframes. Chef Kapoor recalled the commotion: “Suddenly we had to cook the food for fasting with just a few hours left. Anyway, we somehow managed.”

Adapting with Grace

The challenges didn’t end there. Just as everything was set, another message arrived—the entire meal would be vegetarian. Despite these rapid-fire changes, Chef Kapoor’s team delivered an exceptional vegetarian spread featuring Lucknowi, Bengali, Chettinad, and Assamese cuisines, complemented by dishes like Tandoori Lamb Chops, Moti Khass Biryani, and Zafrani Thandai.

Chef Kapoor’s experience teaches a valuable lesson about resilience. He emphasized, “In the kitchen, things rarely go exactly as planned. What matters is staying calm, adapting quickly, and serving with the same care you started with.” His story reminds us of the countless hours and creative efforts chefs invest behind kitchen doors to create memorable dining experiences.
