The recipe begins with preparing besan wadi, a soft dumpling made by combining gram flour with curd, turmeric, red chilli powder, hing, and salt. The second component is the curd mixture, which forms the curry’s base. Blend beaten curd with ghee, ginger, green chillies, turmeric, coriander powder, and a touch of besan to create a smooth, spiced paste. This mixture adds body and tang to the gravy, balancing richness with freshness.

The final flourish comes from the tadka. A quick tempering of ajwain, kalonji, sesame seeds, and red chilli powder in hot oil is poured over the curry, adding depth and aroma. Garnish with fresh mint leaves, and the sabji is ready to serve hot with chapati or roti.
