Nutritionist Simrun Chopra’s easy recipe for a healthier snack.
Energy bars have become a staple for those seeking quick fuel. Yet most commercial varieties are loaded with refined sugars and additives, making them more like candy than a nutritious bite. To counter this, Simrun Chopra, a Bangalore-based nutritionist and health coach and founder of Nurrish, shares a simple recipe for amaranth cranberry energy bars. This homemade alternative is both nourishing and convenient.
A Smarter Snack Choice
Unlike store-bought bars, this recipe focuses on natural ingredients and excludes preservatives. Puffed amaranth, a protein-rich ancient grain, forms the base, while cranberries add tart sweetness. Seeds, nuts, and nut butter provide healthy fats and fibre, making it a balanced snack for busy schedules or post-workout recovery.
Ingredients
- 1 cup puffed amaranth
- ½ cup hemp seeds
- 2 tsp lemon zest
- ½ cup chopped pistachios
- ½ cup dried cranberries or raisins
- ½ cup honey
- ½ cup almond or peanut butter
- ½ cup roasted desiccated coconut (optional)
- ½ cup flax seeds
- ¼ tsp black salt (optional)
Method
- Line a rectangular tray with baking paper.
- Whisk nut butter and honey in a pan, melt over medium heat, and let cool for five minutes.
- Roast chopped pistachios with a light spray of oil and a pinch of salt.
- In a large bowl, mix puffed amaranth, hemp seeds, lemon zest, pistachios, cranberries, flax seeds, and coconut.
- Add the cooled honey‑nut mixture and stir until combined.
- Transfer to the tray and press into a 1 cm-thick layer.
- Refrigerate for four hours, then cut into bars.
Expert Tips
- Homemade nut butter enhances flavour and nutrition.
- Swap cranberries for raisins or other dried berries.
- If sticky, place parchment paper on top and flatten with a rolling pin.
- Roasting coconut improves texture.
- A pinch of salt elevates the taste.
- You can replace hemp seeds with puffed amaranth or other seeds.
- Use only the green zest of lemon for freshness.
The Takeaway
These bars are quick to prepare, require minimal cooking, and provide a wholesome mix of protein, fibre, and healthy fats. Chopra’s recipe shows that with a few pantry staples, you can create snacks that are both delicious and supportive of long-term health goals.
